Sausage and Leek Pie

Ingredients:
FOR THE PASTRY
* 85g cold butter , chopped
* 175g plain flour
FOR THE FILLING
* 450g good pork sausages
* 2 large leeks , sliced and washed
* 25g butter
* 25g plain flour
* 300ml milk
* 2 tsp grainy mustard
* large handful of chopped parsley
Method
1. Preheat the oven to fan 180C/ conventional 200C/gas 6. Whizz butter and flour in a food processor. Add 2 tbsp water and pulse to a ball.Wrap the dough in cling film and chill.
2. Heat the grill to high, brown the sausages for 5 minutes. Fry the leeks in the butter for 2- 3 minutes. Sprinkle in flour and cook, stirring, for 2 minutes. Take off heat and stir in the milk. Season, add the mustard and bring to the boil, stirring.
3. Cut each sausage in five at an angle and pile into a 1.2 litre dish. Stir the parsley into the leek sauce and pour over.
4. Roll out the pastry and cut out a shape 2.5cm larger than the dish.Re-roll trimmings to make a 2.5cm strip. Brush the rim of the dish with water and lay the strip on top. Lift the rest on top, press to seal and crimp edges. Bake for 25 minutes.

Sausages with oregano, mushrooms & olives

* 450g pack reduced-fat sausages
* 1 tsp sunflower oil
* 2 tsp dried oregano
* 2 garlic cloves , sliced
* 400g can chopped or cherry tomatoes
* 200ml beef stock
* 100g pitted black olives in brine
* 500g pack mushrooms , thickly sliced
Method
1. Using kitchen scissors, snip the sausages into meatball-size pieces. Heat a large pan and fry the pieces in the oil for about 5 mins until golden all over.
2. Add the oregano and garlic, fry for 1 min more, then tip in the tomatoes, stock, olives and mushrooms.
3. Simmer for 15 mins until the sausages are cooked through and the sauce has reduced a little. Serve with mashed potato or pasta.

Sausage & Cranberry Stuffing

Ingredients
* 1 onion , finely chopped
* 25g butter
* 2 slices white bread , whizzed to chunky breadcrumbs
* 200g sausagemeat
* 1 apple , peeled and grated
* 200g cranberries
* 50g pistachios
* 4 sage leaves, finely sliced
* ½ tsp mixed spice
* bay leaves , to serve (optional)
Method
1. Heat oven to 200C/180C fan/gas 6. Cook the onion in the butter until soft but not browned. Add the breadcrumbs and stir so they soak up all the excess butter and fat. Let the mixture cool. Tip into a bowl with the sausagemeat, apple, cranberries, pistachios, sage and mixed spice. Mix well, then roll into balls. You can now cover and chill for up to a day before cooking.
2. To cook, place in a roasting tin and bake for 40 mins, turning a few times, or until browned all over. Add the bay leaves, if using, for the final ten minutes of cooking.

Sausages with winter veg mash

Sausages with winter veg mash
Ingredients
4 sausages , regular or reduced-fat
2 parsnips
2 or 3 medium potatoes
175g Brussels sprouts
4 tbsp milk
1 tbsp wholegrain mustard
Method
Grill the sausages for 10-12 mins, turning frequently. Meanwhile, peel and roughly chop the parsnips and potatoes, then cook in boiling salted water for about 10 mins. Shred sprouts, add to the pan for the last 2-3 mins and cook until all the vegetables are tender.
Drain and mash the vegetables, then beat in the milk and mustard with salt and pepper. Serve with the sausages.
